Kimchi Recipe

1.Kimchi Recipe 


Ingredient:


1.5 kilos napa cabbage
3 Tbsp. salt
1 pc. white onion (large)
1 pc. ginger
1 whole garlic (about 12 cloves)
1 bunch of spring onions
3 Tbsp. fermented shrimp (alamang)
2 cups Korean pepper flakes (gochugaru)
2 pcs. carrots (medium size)
2 pcs. radish (medium size)
5 Tbsp. fish sauce
2 Tbsp. all-purpose flour / glutinous rice flour
3 Tbsp. brown sugar
1 cup water



How to Cook?


1.Cut the napa cabbage in slices.

2.Now after cutting cabbage ,add 3-4tbsp pf salt to dehydrate the cabbage so our kimchi is not watery.

3.Keep the cabbage for 2 hours to properly dehydrate the cabbage, keep mixing it after every 30 minute.

4.For a sauce add 2tbsp of flour in an unheated pan ,Add 1 cup of water and stir well to mix the flour completely.

5.Add 3tbsp of brown sugar, heat the pan on medium flame, stir the mixture until it is close to boiling and we get the desired consistency.

6.When thickened ,turn off the flame and lot the paste cool down.

7.In a blender ,put the chopped white onion ,add garlic ginger ,fermented shrimp and paste that we made and blend it well.

8.Now wear the gloves and add the blended mixture ,add a cup of pepper flakes and mix well.

9.Add the chopped carrots, radish , spring onion and fish sauce ,now add the cabbage and mix well with hands or the way you like .

10.Kimchi is Ready to Serve.

Ingredients:

Napa Cabbage
Green Onions
1 Apple
1 Pear
Serrano Chili Peppers
Thai Chili Peppers
Onions
Daikon Radish
Korean Chili Pepper Powder
Salted Fermented Shrimp
Korean Fish Sauce
Salt

How to Cook?


Step 1: Prepare the cabbage

Cut the Cabbage into smaller pieces and remove the core. Wash the cabbage. Try to drain most of the water. Add salt to the cabbage and mix. Put the cabbage aside for an hour.

 Step 2: Prepare the paste

Peel, cut, and blend the following into a sauce: 1 Apple, 1 Pear, 1 Onion, 1 Daikon Radish, Chili Peppers (up to you how many). 


Step 3: Prepare the other veggies

Slice green onions, onions and radish into small thin pieces.


Step 4: Rinse cabbage

After an hour or two, you'll notice a change in the cabbage. It will lose its crisp and become wet. Rinse the salt off and drain the water again.


Step 5: Mix everything together

Put the cabbage and other vegetables together. Slowly add the paste, chili pepper powder, salted fermented shrimp, and fish sauce. Mix, mix, mix. Add more paste and sauce if you need to. Mix some more.


 Step 6: Fermentation

When you feel like the cabbage is covered in enough sauce, put it into a jar.
You can eat it any time but it's best to let it sit in room temperature for a few days. The taste will slowly change over time.  Place it into the fridge when it's ready.

Kimchi is ready.

Rice flour 2 tbsp
Water1/2 cup
Sugar 2 tablespoons
Radish 1 cup
Spring onion greens 1/4 cup
Carrot 1/4 cup
Onion 1 large
Garlic 10-12 cloves
Ginger 1 inch
spring onion bulbs 10-12
Carrot 1 small piece
Red Chili Powder 1/4 cup - 1/2 cup


How to make?
