1. Lahori Mutton/Lamb Karahi

Ingredients:

Yogurt ½ Cup 

Cream 2 tbsp 

Water ½ Cup or as required 

Garlic paste 1 tbsp 

Turmeric powder ¼ tsp

Mutton mix boti ½ kg

Tomatoes chopped 2 medium

Sal ½ tsp or to taste

-Cooking oil ½ Cup

Red chili powder 1 tsp or to taste

Garam masala powder 1 tsp

Green chilies chopped 2-3 

Fresh coriander chopped 

Ginger julienne 

Fresh coriander

Ginger julienne  

Green chilies 


How to Cook?

1.In bowl, add yogurt and cream, whisk well & set aside.

2.In wok, add water, garlic paste and mix well.

3.Add turmeric powder ,mix and bring it to boil.

4.Add mutton mix boti, tomatoes, salt and mix well.

5.Cover and cook on medium low flame for 15-20 minutes then cook on high flame for 8-10 minutes.

6.Add cooking oil, mix continuously and cook for 5 minutes.

7.Add red chili powder and mix well.

8.Add garam masala powder, mix well and cook until oil separates.

9.On low flame, add yogurt +cream mixture, mix continuously and cook for 3-4 minutes.

10.Add green chilies, fresh coriander and ginger, mix and cook on low flame until oil separates.

11.Garnish with fresh coriander, ginger, green chili & serve.

Delicious Lahori Mutton Karahi Eid-ul-Adha is ready.




2.Shinwari Mutton Karhai Eid-Ul-Adha Special


Shinwari Mutton Karhai Eid-Ul-Adha Special

Ingredients:

Water ½ Cup or as required 

Garlic paste 1 tbsp 

Mutton mix boti ½ kg

Cooking oil ½ Cup

Tomatoes peeled 250 grams

Salt 1 tsp or to taste

Black pepper crushed 1 tsp 

Green chilies 5-6 

Ginger julienne

Fresh coriander


How to Cook?


1.In wok, add water ,garlic paste and mix well.

2.Add mutton mix boti and mix well until changes color.

3.Cover and cook on medium low flame for 20-25 minutes then cook on high flame for 8-10 minutes.

4.Add cooking oil, mix well for 2 minutes and cook on high flame until oil separates.

5.Add tomatoes (cut in two halves),cover and cook on low flame until tomatoes are soft.

6.Mix well and cook on high flame for 4-5 minutes.

7.Add salt and black pepper crushed, mix well and cook until oil separates.

8.Add green chilies and mix.

9.Add ginger, fresh coriander & serve.

3.Peshawari Mutton Karhai /Charsi Mutton Karahi

Ingredients:

Desi ghee ½ Cup

Mutton mix boti ½ kg

Salt 1 tsp or to taste

Ginger garlic paste 1 & ½ tbsp

Turmeric powder ½ tsp

Red chili powder ½ tbsp or to taste

Yogurt) ¼ Cup

Tomatoes peeled & halved 5-6

Water 1-2 Cups

Black pepper crushed 1 tsp

Coriander seeds roasted & crushed 2 tsp

Cumin seeds roasted & crushed 1 tsp

Garam masala powder 1 tsp

Dried fenugreek seed  1 tbsp

Green chilies 3-4

Fresh coriander

Ginger julienne


How to Cook?

1.In wok, add desi ghee and let it melt, add mutton mix boti and salt, mix well or 3-4 minutes.

2.Cover and cook on low flame for 5-8 minutes.

3.Add ginger garlic paste, turmeric powder, red chili powder, yogurt and mix well until oil separates.

4.Add tomatoes and water, cover & cook on low flame until meat is tender (20-25 minutes).

5.Mix well and crushed tomatoes.

6.Add black pepper crushed, coriander seeds, cumin seeds, and garam masala powder, mix well and cook until oil separates.

7.Add dried fenugreek seeds and mix.

8.Add green chilies, fresh coriander and ginger, cover & let it simmer for 2 minutes.


4.Charsi/Peshwari Mutton Karhai:



Charsi/Peshwari Mutton Karhai


Ingredients:

1kg Lamb/Mutton 

1/2kg tomatoes

4 green chilies

salt to taste

1 Cup Tallow /Oil (for original taste add tallow)

How to Cook?

1.In a Karahi  add 1 cup tallow ,and add 1kg meat (for original taste use meat without wash) and add 1/4th tsp salt, cook the meat on steam for 30 minutes.


2.After 30 minutes add 1/2kg tomatoes without cutting and cook it again on steam.


3.After 10 minutes  mash the tomatoes and mix them well with meat on low flame and cook it again for 30-40 minutes to tender the meat.


4.Now after 40 minutes ,remove the tomato skin if any left and add 4 green chilies ,when oil separates turn off the heat and dish out.

Delicious Charsi Mutton Karahi is Ready.

Peshawari Namkeen Ghost Recipe Eid Special



Ingredients:

Oil 2-3 tbsp

Mutton with fat 1 kg + ½ kg bones

ginger paste 1 tbsp

garlic paste 1 ½ tbsp

onion large 1

coriander crushed 1 tbsp

black pepper 1tbs / to taste

cumin seeds roasted & crushed 1tbs

salt 1 tbsp or to taste


How to Cook?

1. Heat oil in a pan and add all bones and meat, fry until it changes color, cook for 2-3 minutes. Add ginger and garlic paste and cook for 2 more minutes. Add sliced onion and cook than add all dry spices. Mix and cook for few minutes. 

2. Add water enough to dip all the ingredients. Cover and cook for 1 hour and 15 minutes on low flame.

3. For Namkeen ghost with gravy (shorba), once meat is completely tender serve it with gravy (shorba). 

4. For bhuna Namkeen gosht , cook meat on medium high flame until water dries and oil separates. It is ready to serve. 



6.Butt Mutton Karahi Recipe

Ingredients:

1kg Mutton/Lamb

3 tomatoes

1  medium Onion

8 cloves chopped garlic with cover  with half glass of water and strain the garlic from strainer 

1tsp butter,

1-1/2 tsp Coriander powder 

1/2tsp crushed black pepper

4tbsp cooking oil

1tbsp ghee

100gram of yogurt

 5-6 whole red chilies

2-3 green chilies

Julian cut ginger 

 Fresh coriander.

How to Cook?


1.In a cooker add 1 kg mutton ,3 whole tomatoes ,1  medium Onion ,1tp salt ,1sp red chili powder,8 cloves chopped garlic with cover  with half glass of water and strain the garlic from strainer and add it, mix it and cover it, cook on medium flame for 12 minutes and if needed more cook it for 15 to 16 minutes.

2.After 1 2 minutes remove the lid ,and removes the cover of tomatoes ,turn the flame high and dry the remaining water ,after drying add 1tsp butter,1-1/2 tsp Coriander powder ,1/2tsp crushed black pepper,4tbsp cooking oil, cook it for 2-3 minutes, after 2-3 minutes then add ghee 1tbp,cook for 2 minutes more.

3.Turn the flame low and add 100gram of yogurt ,and cook for 2-3 minutes, when oil separates add whole 5-6 whole red chilies,2-3 green chilies, turn off the flame and garnish it with Julian cut ginger and fresh coriander.

Delicious Butt Mutton karahi Eid-ul Adha Special is ready.

Ingredients:

For Karahi Masala Powder:

 coriander seeds 4 tbsp

 cumin seeds 2 tbsp (dry roasted & crushed)

 black pepper corns 1 tbsp

fenugreek seeds 1 tsp

 cinnamon sticks 4 pieces

 bay leaves 6

 dry red chilli 6

 nutmeg powder 1/2 tsp

 red chilli powder 1 tbsp

 turmeric 1 tsp

 garam masala powder 1 tsp

 paprika powder 1 tbsp

 salt 2 tsp


For Curry:

 mutton 1 kg

 ginger & garlic paste 1 tbsp

 tomatoes 4 medium (grind)

 onions 2 medium (grind)

 green chili 2

 oil 1/2 cup (or) ghee 1/2 cup

 salt 1 tsp

 fresh coriander handful

 Karahi masala 2 tbsp (heaped) 


How to Cook?


1.For karahi masala powder, in a blender add coriander seeds, cumin dry roasted, dry red chilli, black pepper corn, fenugreek seeds, cinnamon stick, bay leaves and grind it to a powder.

2. then place the grinned masala n a bowl and add red chili powder, salt, turmeric, nutmeg, garam masala powder mix well (store in a air tight jar and use when ever you want to use it n chicken, vegetables curry).

3.For  curry: heat ghee or oil add meat, ginger & garlic paste and fry the meat till changes color, on high flame.

4. Now add the karahi masala powder, salt, paprika powder, tomato and onion grind together and add that, water 1 glass mix, wait for a boil on high flame, cover and cook on low to medium flame till the meat is cooked and the ghee comes on surface.

5. Add green chili, fresh coriander mix well.

6 Serve hot with roti, naan.


8.White Mutton Karahi Eid-Ul-Adha Special


White Mutton Karahi Eid-Ul-Adha Special


Ingredients:


Mutton mix boti 750 grams
Onion sliced 1 large
Salt 1 tsp or to taste
Cinnamon sticks 2
Green cardamom 2
Ginger julienne 1 inch piece
Water 1 & ½ Cups or as required
Cooking oil 1/4 Cup
Ginger garlic paste 1 tbsp
Cumin seeds roasted & crushed ½ tbsp
Green chilies 3-4
Coriander powder roasted & crushed ½ tbsp
(Yogurt whisked 1 Cup
White pepper powder 1 tsp
Black pepper crushed 1 tsp
-Fresh coriander chopped
Ginger julienne
Fresh coriander
How to Cook?

1.In wok, add mutton mix boti, onion, salt, cinnamon sticks, green cardamom, ginger, water and mix well, bring it to boil,cover partially and cook on low flame 40-50 minutes or until meat is tender then cook until water is reduced.

2.Add cooking oil, ginger garlic paste, cumin seeds and mix well.

3.Add green chilies and mix well.

4.Add coriander seed and mix well then cook on high flame for 8-10 minutes.

5.Add yogurt, white pepper powder, black pepper crushed, mix well and cook until oil separates.

6.Add fresh coriander.

7.Garnish with ginger, fresh coriander & serve!

White Mutton Karahi Eid-Ul-Adha Special is ready.



9.Lahori Mutton Karahi Eid-Ul-Adha Special



اجزاء:


دہی 1/2 کپ 


کریم 2 کھانے کے چمچ

لہسن کا پیسٹ 1 کھانے کا چمچ 


ہلدی پاؤڈر 1/4 چائے کا چمچ


مٹن مکس بوٹی 1/2 کلوگرام


ٹماٹر کٹا ہوا 2 درمیانہ


سال 1/2 چائے کا چمچ یا ذائقہ کے لئے


-کھانا پکانے کا تیل 1/2 کپ


لال مرچ پاؤڈر 1 چائے کا چمچ یا ذائقہ کے لئے


گرم مصالحہ پاؤڈر 1 چائے کا چمچ


ہری مرچیں 2-3 کٹی ہوئی

کھانا کیسے پکانا ہے؟


1. پیالے، دہی اور کریم شامل کریں، اچھی طرح پھینٹ لیں اور ایک طرف رکھ دیں۔


2. کڑاہی، پانی، لہسن کا پیسٹ شامل کریں اور اچھی طرح مکس کریں۔


3.ہلدی پاؤڈر شامل کریں، مکس کریں اور اسے ابالنے کے لئے لائیں۔


4.مٹن مکس بوٹی، ٹماٹر، نمک شامل کریں اور اچھی طرح مکس کریں۔


5.ڈھک کر درمیانی ہلکی آنچ پر 15-20 منٹ تک پکائیں پھر 8-10 منٹ تک تیز آنچ پر پکائیں۔


6.کھانا پکانے کا تیل شامل کریں، مسلسل مکس کریں اور 5 منٹ تک پکائیں۔


7.لال مرچ پاؤڈر شامل کریں اور اچھی طرح مکس کریں۔


8.گرم مصالحہ پاؤڈر شامل کریں، اچھی طرح مکس کریں اور تیل الگ ہونے تک پکائیں۔


9.ہلکی آنچ پر دہی +کریم کا مرکب شامل کریں، مسلسل مکس کریں اور 3-4 منٹ تک پکائیں۔


10.اس میں ہری مرچ، تازہ دھنیا اور ادرک شامل کریں، تیل الگ ہونے تک ہلکی آنچ پر مکس کریں اور پکائیں۔


11.تازہ دھنیا، ادرک، ہری مرچ سے گارنش کریں۔
