Ingredients for Masala Dosa Recipe:
For batter 2 cup rice
Half cup urad Dal
⅓ cup Chana Dal
1 tsp Methi Seeds / Fenugreek For Aloo masala Oil - 1 tbsp Mustard Seeds - 1 tsp Curry leaves - 2 sprig Ginger - ½ inch Green chilli - 2-3 Onion - sliced Turmeric - ½ tsp Boiled Potatoes - 5 Red Chilli Powder - 1 tsp Salt - to taste Coriander - 1 tbsp After Fermentation, to cook Salt - as per taste Oil - to roast dosa.
Directions to Make:
1.In a large bowl add 2 cups of Rice, 1/3 cup of chana daal and 1/2 cup of urad daal.
For fermentation we are going to add 1tsp of Meethi/Fenugreek seeds, mix all ingredients together, wash them for 3 , 4 times or until water is clear and soak them for about 4 to 5 hours.
2.Now take a grinding jar and add mixed rice with water to make a fine paste ,dont make the batter to much fine.
3.Now take a shawl or place the batter in some hot place to make the batter fermented .
4.Keep the batter for 14 hours to ferment nicely.
5.After the batter is fermented ,
6.Now preheat a pan and take one serving spoon full of masala dosa and put in a pan and nicely spread it on a pan to make a thin layer.
7.Once the batter is rise out then we will add some oil,at this time cook it on a low flame to have a crispy dosa.
8.Once the sides gets golden ,we will put potato mixture and fold the dosa in a style you like and our crispy Delicious Dosa is ready to serve.
ALoo Masala Making:
1.Take a pan and add some oil, make sure oil is hot and then add 1tsp of mustard seeds ,once mustard seeds splatter then we will add curry leaves along with them we will add crushed ginger and thinly cut green chilies and 2 onions roughly sliced.
2.Now add 1tsp of turmeric and cook it for 2 minutes.
3.When onions and mixture is cooked ,then add 5 boiled potatoes ,with them add red chili powder ,salt and freshly chopped coriander.
4.Cook the potatoes until deglaze it and ,and mash them nicely.
5.And our aloo masala is ready.
