1.Shahi Mutton Korma Eid-ul-Adha Special
Ingredients:
Cashew nuts 11-12
Cinnamon stick 2 small
Cloves 5-6
Black cardamom 1
Mace blades 2
Green cardamom 5-6
Cumin seeds 1 tsp
Water 4-5 tbsp
Mutton mix boti 750g
Yogurt 1 Cup
Ginger crushed 1 tbsp
Garlic crushed 1 tbsp
Green cardamom 7-8
Black peppercorns ½ tsp
Cinnamon sticks) 2
Bay leaf 1
Cloves 7-8
Red chili powder 1 tbsp or to taste
Turmeric powder ½ tsp
Salt 1 & ½ tsp or to taste
Onion fried 2 Cups
Ghee ½ Cup
Water 3 Cups or as required
Coriander powder 1 tbsp
Cashew nuts halves 8-10
Almonds halves 8-10 (soaked & peeled)
Ginger julienne

How to Cook?
1.In a spice mixer, add cashew nuts, cinnamon sticks, cloves, black cardamom, mace, green cardamom, cumin seeds & grind well.
2.Add water & grind to make a paste and set aside.
3.In a pot, add mutton, yogurt, ginger, garlic, green cardamom, black peppercorns, cinnamon sticks ,bay leaf, cloves, red chili powder, turmeric powder, salt & fried onion (crush with the help of hand),mix well & cook for 8-10 minutes.
4.Add ghee, mix well and cook for 10-12 minutes.
5.Add water, coriander powder, ground paste ,mix well & bring it to boil, cover & cook on low flame until tender (approx. 35-40 minutes).
6.Add cashew nuts, almonds and mix well then cook on high flame until oil separates.
7.Garnish with ginger, cashew nuts and serve with naan.

کیسے پکائیں؟
1. مصالحے کے مکسچر میں کاجو، دار چینی کی چھڑیاں، لونگ، کالی الائچی، گدی، ہری الائچی، زیرہ ڈال کر اچھی طرح پیس لیں۔
2. پانی شامل کریں اور پیس کر پیسٹ بنائیں اور ایک طرف رکھ دیں۔
3۔ایک برتن میں مٹن، دہی، ادرک، لہسن، ہری الائچی، کالی مرچ، دار چینی کی چھڑیاں، بے پتی، لونگ، لال مرچ پاؤڈر، ہلدی پاؤڈر، نمک اور تلی ہوئی پیاز (ہاتھ کی مدد سے کچل کر) ڈال کر مکس کریں۔ اچھی طرح سے 8-10 منٹ تک پکائیں۔
4. گھی ڈالیں، اچھی طرح مکس کریں اور 10-12 منٹ تک پکائیں۔
5. پانی، دھنیا پاؤڈر، پیسٹ پیسٹ شامل کریں، اچھی طرح مکس کریں اور ابالنے پر لائیں، ڈھک کر ہلکی آنچ پر ہلکی آنچ پر پکائیں (تقریباً 35-40 منٹ)۔
6۔کاجو، بادام ڈال کر اچھی طرح مکس کریں پھر تیز آنچ پر تیل الگ ہونے تک پکائیں۔
7. ادرک، کاجو سے گارنش کریں اور نان کے ساتھ سرو کریں۔

3.Degi Style Mutton korma Eid-ul-Adha Special
Ingredients:
Mutton 1/2 Kg
Onion 1 Cup (Fried)
Yogurt 1 Cup
Turmeric Powder 1/2 tsp
Black Pepper 1 tsp
Coriander Powder 1 tbsp
Red Chili Powder 1 tsp
Garam Masala Powder 1/2 tsp
Ginger Garlic Paste 2 tbsp
Green Cardamom 6
Salt 1 tsp
Cinnamon 2
How to Cook?
1.Turn the heat ,and in a pan add mutton ,add 1/2tsp turmeric powder ,red chili powder, Turmeric Powder 1/2 tsp, Black Pepper 1 tsp, Coriander Powder 1 tbsp, Garam Masala Powder 1/2 tsp, Ginger Garlic Paste 2 tbsp Green Cardamom 6 ,Salt 1 tsp ,Cinnamon 2 ,1 cup yogurt, fried onion, cover the lid cook it on medium to low flame for 15 minutes.
2.After cooking of 15 minutes, add half cup oil and fry the mutton nicely.
3.after a good fry add coriander powder ,then add 4 glass of water to cook the meat nicely and tender.
4.Covert he lid and cook for 35 minutes on medium low flame.
5.After 30 minutes turn off the flame and add garam masala powder green chilies and fresh coriander power, Delicious Degi Korma Eid-Ul-Adha is ready to serve.
4.White mutton Korma Eid-ul-Adha Special
Ingredients:
700g Mutton
1 cup Yogurt
1 cup Onion (chopped)
1/2 cup Oil
1/2 cup Cream
1 tbsp White pepper powder
1 tsp Black Pepper
1/2 cup Milk
2 cups Mutton Stock
1/2 tsp Whole spices
Salt to taste
2 tbsp Ginger garlic paste
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Cumin seeds
3 Green chilies
Water as required
How to Cook?
1.In a pot add mutton, water, green chilies, one tablespoon ginger garlic paste and salt.
2.Cover it and cook on low flame for 30 to 40 minutes or until mutton is cooked.
3.Separate mutton and stock and set aside.
4.In a pan heat oil, add whole spices, onion, cumin seeds and sauté for a minute.
5.Add one tablespoon ginger garlic paste and cook for 2 minutes.
6.Add mutton, salt, white pepper, black pepper, yogurt and cook for 5 minutes.
7.Add green chilies, coriander powder, cumin powder and cook for 2 to 3 minutes.
8.Now add mutton stock, cream and cook for 5 more minutes.
9.Garnish with green chilies, ginger, coriander leaves and your dish is ready to serve.
5.Mutton Korma Delhi Style Eid-ul-Adha Special
Ingredients:
Goat meat - 1 kg (with fat and bones)
Ginger garlic paste- 3 tsp
Whisked Curd- 200 grams
Fried onions made into a paste- 4 tbsp
(around 3 medium onions fried & made into a paste)
Turmeric powder- 1/2 tsp
Red Chili powder- 2 tsp
Coriander powder- 4 tsp
Mace- 1/2 tsp
Nutmeg powder- 1/2 tsp
Whole garam masala/ spices:
Green cardamom - 6
Black cardamom- 2
Cinnamon- 4 small pieces
Cloves- 6
Black peppercorns- 10-12
Salt - 1 tsp
Oil- 4 tbsp
Kewra water- 1/4 tsp
How to Cook?
1.Wash & clean the mutton pieces & drain the water.
2. Slice 3 medium onions, fry them in oil till golden brown in colour. Take it out & allow to cool. Crush them with hand till powdery. Take out 4 tbsp of that and keep aside.
Process:
3.Take a pressure cooker or pressure pan and heat 4 tbsp of oil.
4. Now add the whole garam masala & once fragrant add the mutton pieces.
5.Mix well & keep frying on high for around 7-8 mins till mutton changes color and leaves water.
6.Now add ginger garlic paste, mix & keep frying on high to medium for around 10 mins.
7.Add all the masalas/ powders - Red Chilli Powder, Turmeric powder, Coriander powder & salt.
8.Mix well & fry the meat till oil separates.
9.Now add enough water to cover the mutton & pressure cook for 3-4 whistles.
10.Allow it to cool before opening the lid.
11.Place the cooker back on heat & cook on high for around 2-3 mins to dry up any excess water.
12.Now switch off the gas & add the whisked curd & mix it well.
13.Put it back on flame & keep mixing & cooking for around 5 mins for the curd to get cooked.
14.Now add the fried onion paste/ powder, mix it well & cook for around 10 mins till oil separates.
15.Add the Mace Powder & Nutmeg Powder, mix well & simmer for 2 mins.
16.Lastly add the kewra water, mix & simmer for 2 mins.
16.Serve hot with roti or rice.
