Tomato Sauce


1.Tomato Sauce

Ingredients:

Red Tomatoes 2 & ½ kg

Garlic cloves 8-10

Ginger cubes 3 inch piece

Onion 1 medium

Cinnamon stick 1

Cloves 3-4

Sugar) 200 gms

Red chili powder 2 tsp

Salt 1 tsp or to taste

Mustard powder ½ tsp

Vinegar 1 Cup


How to Make?

1.Wash and cut tomatoes in cubes.

2.In pot, add tomatoes ,garlic, ginger, onion, cinnamon stick, cloves and mix well.

3.Cover and cook on low flame for 30 minutes and keep stirring in between.

4.Remove cinnamon stick, pour whole mixture in a bowl and blend until fine puree, strain well though fine sieve.

5.Put it on stove, in tomato puree, add sugar ,red chili powder salt, mustard powder and vinegar, mix well and bring it to boil and cook on medium to low flame for 35-40 minutes until thickens (check by plate technique method) and cook until water is reduced (approx.8-10 minutes) and again check by plate technique method.

6.Let it cool and store in a dry & clean jar for up to 2-3 weeks in refrigerator.

-Tomato sauce is ready.


2.Home Made Tomato Sauce


Home Made Tomato Sauce



Ingredients:


3kg  Plum/Roma tomatoes

2-3 tablespoons Olive oil

1 large onion

3 garlic loves

Salt to taste

1-2 teaspoons Oregano (optional)

7-8 Basil leaves

2 tablespoons Lemon juice/vinegar (if canning use ¼ cup)


Directions:

1. Fill a large pot with water and bring to a boil. Meanwhile prepare an ice bath. Core out the stems from the tomatoes and slice a shallow "X" in the bottom of each tomato.

2. Blanch the tomatoes in boiling water for 30-60 seconds, then transfer to ice bath. Remove the skin from the tomatoes. 

3. Chop the tomatoes into small chunks and set aside.

4. In a large pot heat olive oil. Add chopped onion and sauté over low heat until golden, about 7-8 minutes. Add crushed garlic and sauté for 2 minutes more. 

5. Add chopped tomatoes to the pot, season with salt, oregano and basil. Bring the mixture to a boil, reduce the heat and simmer for 60-90 minutes, until reaches desired consistency (until almost all the liquid has evaporated and the tomatoes are reduced to a thick, jam-like consistency). Stir frequently. At the end add the vinegar, stir and turn the heat off. 

6. If you prefer smooth tomato sauce, puree the sauce using a hand blender. Transfer to a jar. 


3.Home Made Tomato Ketchup



Home Made Tomato Ketchup


Ingredients

1.5 kg tomatoes

1/2 cup brown sugar

1 1/2 cup vinegar

1/2 tsp chilli powder

Salt to taste

500 ml water


How to Make?

1.Roughly cut the tomatoes then put it in the pressure cooker with little bit of water and cook it for 3-4 whistles.

2.Allow the pressure to subside and later open the lid of pressure cooker.

3.Once done, blend it into very fine puree and run it through the mesh.

4.Cook the puree on moderate heat, add brown sugar, white vinegar, chili powder, salt.

5.Let it continue cooking for 15-20 minutes until it becomes thick.

6.Put few drops on clean plate, tilt it and if its not runny then the ketchup is ready.

7.Put the ketchup into a squeeze bottle.

8.And homemade tomato ketchup is ready!
