Ingredients for Chole Bhature Recipe by Expert Amna


Pathoray/Bhature Ingredients:

  • Plain Flour 300gm
  • Yogurt 6 tbsp
  • Semolina 3 tbsp
  • Salt 1/2 tsp
  • Powdered Sugar 1 tsp
  • Baking Powder 1/2 tsp
  • Baking Soda 1/2 tsp
  • Ajwain 1/4 tsp
  • Oil 3 tbsp
  • Water needed

Cholay/Chole Ingredients:

  • Chickpea 250 gm (Boiled)
  • Onion 1
  • Dry Pomegranate Seeds 1 tbsp
  • Yogurt 3 tbsp
  • Green Chili 1
  • Some Green Coriander
  • Ginger Paste 1 tsp
  • Salt as You Required
  • Red Chili Powder 1/1/2tsp
  • Dried Mango Powder 1 tbsp
  • All Spice Powder 1 tsp
  • Oil 3 tbsp


How to make Chole Bhature:

  • For bahture , take plain flour to add 3tbsp semolina, salt 1/2 tbsp, powdered sugar 1tbsp, baking powder, 1/2 tsp, Baking Soda 1/2 tsp, Ajwain 1/4 tsp, Oil 3 tbsp, Yogurt 6tbsp, mix all thing well then add water and knead soft for 5 minutes.
  • Cover the kneaded flour and keep it for 4 hours.
  • Now make it like we make roti and fry them in oil.

For Cholay:

  • Turn the flame on, in a pot add one sliced onion, fry them light pink.
  • Now add 1tbsp ginger paste, add salt and red chili powder 1 and a half tsp and mix it well, add a little bit of chickpea boiled waiter and mix, cover and cook it for 3 minutes on medium flame.
  • Onion gets soft now add boiled chickpeas, fry it for 5 minutes on high flame.
  • Now we will add Dried Mango Powder 1 tbsp on the medium we will add garam masala powder and1 cup water, cover the lid cook it for 10 minutes.
  • Now after 10 minutes add anardana and mix.
  • Add yogurt on top with green chilies and coriander.
  • Chole bhature ready to eat.

Ingredients:

Bhature:

  • 3 tbsp semolina
  • 8 tbsp room temp water
  • 2 cups ap flour/ maida/ plain flour
  • 1 tsp salt
  • 1 tsp sugar
  • ½ tsp baking powder
  • 2 tbsp cooking oil
  • 3 tbsp room temp. yogurt


Chole

  • 2 tbsp ghee
  • 3 tbsp mustard oil
  • 1 bay leaf
  • 3 dry red chilies
  • 1 tsp cumin seeds
  • 1 cardamom
  • 2 chopped garlic cloves
  • 1 tbsp chopped ginger
  • 1 chopped medium red onion
  • ¾ tsp salt
  • ¼ tsp turmeric
  • 1 tsp red chili
  • 1 tsp ground coriander
  • 4 tbsp tomato puree
  • 750-gram boiled chickpeas
  • 3/4 tsp garam masala
  • 3-4 green chili
  • 1/2 tsp ajwain(caraway)

How to make Chole Bhature:


  • Absorb semolina in a little bowl with 4 tbsp water

INGREDIENTS for Sushi:

  • 500g Sushi rice
  • Water
  • 1 teaspoon salt
  • 2 teaspoon sugar
  • 4 tablespoon rice vinegar
  • Carrot
  • Cucumber
  • Salmon
  • Seaweed(rough side)
Last ingredients you can choose according to your taste.


How to Prepare Sushi:


  • Take 500g of sushi rice, rinse it 3 or 4 times until its starch is gone.
  • To cook 500g of sushi rice, take 660 milliliters of water, pop a lid and put it on the stove bring it to a boil and simmer it for 10 minutes.
  • Until simmer for 10 minutes, we will leave to stand it for 10 minutes, don't take the lid off.
  • While it's cooking we will take another bowl and add 1tsp of salt,2sp of sugar, and 4tbsp of rice vinegar.mix them well until everything gets dissolve.
  • Once the rice is done, soft and sticky but individual look, take them out in another bowl and mix the vinegar mixture into it.
  • get yourself some clean water,
  • Now take the seaweed, we are going to put rice on the rough side, now spread rice on seaweed nicely.
  • Now put all ingredients that you like in the center of the rice.
  • Now apply little pressure and slowly rolls the sushi.
  • Cut the slices carefully and your sushi is ready to eat.

INGREDIENTS for Sushi:


  • 3/4 sushi rice.
  • 2 cups water.
  • Salt to taste.
  • 1 medium cucumber(thin sliced).
  • 1/2 large red capsicum(thin sliced).
  • 2-3 asparagus
  • 1tsp castor sugar.
  • 1tbsp white wine vinegar.
  • 1 nori sheet

How to Prepare Sushi:


  • Start with sushi rice, rinse them well.
  • In a pot add rice and water with a bit of salt, bring them to boil until rice becomes soft and sticky.
  • When rice gets boiled, add 1tsp castor sugar,1tbsp white wine vinegar.,mix them well
  • Take 1 nori sheet,, cut it into half, stick rice on the nori sheet, place all veggies on rice.
  • Fold it slowly and carefully and cut it into slices.
  • Sushi is ready.

Ingredients:

  • 1/2kg Mutton
  • 1tbsp Ginger Garlic paste
  • 1tspoon garam masala powder
  • 5tbsp Yogurt
  • 1tbsp Red Chilli powder
  • 1tbsp crushed coriander
  • 1 tsp crushed blackpepper
  • 1 tsp crushed zeera
  • 4 Tomatoes
  • 1 cup oil
  • Salt according to taste
  • 4-5 green chilies
  • A hand full of fresh coriander
  • Julian cut ginger for garnishing

Steps to cook:

  1. Take half kg mutton.
  2. Wash it Properly.
  3. In a pot, add ginger garlic paste, red chili powder,garam masala powder, salt, and yogurt without adding oil and water, turn the flame on.
  4. Cook it until meat water dries.
  5. At this point add tomatoes with crushed coriander, crushed zeera, crushed black pepper, At this point add oil but slowly.
  6. Let the meat cook.
  7. On a slow heat let the meat cook and add fresh coriander, Julian cut ginger and green chilies
  8. Serve with naan or roti.

Ingredients:


  • 1/2 cup of ghee
  • 2 medium-size Onion Chopped.
  • 1tbsp Ginger Garlic paste
  • 3 Black Cardamom
  • 1tsp Salt
  • 1/2tsp Turmeric Powder
  • 1tsp red Chili Powder,
  • 1tbsp Coriander Powder
  • 1tsp Paprika Powder 
  • 1inch of Cinnamon stick
  • 3-4 cups Water
  • 2tbsp Flour
  • 1tbsp Cumin 
  • 10-12 Black Pepper 
  • 5-6 Red Round Chillies 

Preparation:

  • In a handi add 1/2 cup of ghee, when ghee gets heated, add chopped onion.
  • When onions get transparent, add 1tbsp ginger garlic paste
  • Cook it for 1-2 Minutes.
  • Add 3 Black Cardamom and mutton fry the mutton nicely.
  • Now add 1tp salt,1/2tsp turmeric powder,1tsp red chili powder,1tbsp coriander powder.
  • Mix all masalas and fry it for 10-12 minutes and then 1tsp paprika powder and 1inch of cinnamon stick.
  • After nicely frying for10-12 minutes add 3-4 cups o water.
  • Cover the lid and cook for 40 minutes or until the mutton is nicely done.
  • Take half a cup of water and add plain flour to make a slurry.
  • Add the slurry and then add 1tbsp cumin 10-12 black pepper and Red Round Chillies and.
  • Cook on low flame for 5 minutes further.
  • Mutton Kunna is ready, garnish it with ginger.

Ingredients:

  • 1kg Mutton. 
  • 2 Chopped Medium Size Onion.
  • 1cup Yogurt.
  • 1/4 cup Flour.
  • 1tbsp Ginger Garlic Paste.
  • 1tsp red chili Powder.
  • 1tbsp Coriander Powder.
  • 1tbsp Cumin Crushed.
  • 1tsp Salt.
  • 1/4tsp Turmeric Powder.
  • 1tsp Garam Masala Powder.
  • 1tbsp Ginger Julain cut.
  • 1cup oil/Ghee
  • 1 Bayleaf
  • 8 Green Cardamom
  • 1tsp black pepper
  • 2 Cinnamon
  • 6 Cloves.
  • 5tbsp Green Coriander 
  • 5-6 Green Chilies.
  • 3 Glass Water.


Preparation:

  • Turn on the flame and add 1cup of ghee, when the ghee gets melted, we will add chopped onion.
  • Fry until golden brown.
  • Now we will add Garam Masla 1 Bayleaf,8 Green Cardamom,1bsp black pepper,2 Cinnamon and6 Cloves.
  • Mix a bit and add 1kg mutton, add ginger garlic paste and nicely fry mutton.
  • On medium flame, we will add further masala,1tsp red chili Powder.,1tbsp Coriander Powder,1tsp Salt, and 1/4tsp Turmeric Powder mix them well.
  • Fry for 2 minutes and then add yogurt.
  • Now fry the mutton until the oil becomes visible then add 3 cups of water.
  • Now cover the lid and cook it for 1 hour on medium to medium-low flame.
  • Now, mix water in plain flour, make a slurry, add it slowly, and keep stirring.
  • Now we will add garam masala powder and crushed cumin powder and cook for 10 minutes on medium flame
  • Our Mutton Kunna is ready and garnishes it with green chilies and fresh coriander.

Home Made Rabri Recipe by Expert Ruby



Origin of Rabri:


Rabri is a sweet, consolidated milk-based dish, starting from the Indian subcontinent, made by bubbling milk on low warmth for quite a while until it becomes thick and changes its tone to grayish or light yellow.

Ingredients

  • 6 cup full-fat milk
  • 1/4 teaspoon cardamom powder
  • 4tbsp of milk powder
  • 3tbsp sugar


Preparation:

  • Bring it to a boil, after boiling turn the flame on medium, and keep stirring.
  • We have to keep cooking and stirring until 5 cups of milk are left.
  • Now we have to keep boiling the milk until one cup is left, when one boil comes we have to keep the cream(Balai) to the sides of the pan and stir, again creams on and we will stick the cream to the sides of pans until one cup left.
  • Now add 1/4 teaspoon cardamom powder, add 4tbsp of milk powder and cook for 1 minute.
  • At this point add sugar, cook for 1-2 minutes and turn the flame off.
  • Now remove all the Balai(cream) from the sides of the pan into rabri.
  • Sprinkle almonds and pistachios.
  • Serve in a boil and your Rabri is ready.

Ingredients

  • 2litre Milk
  • 5tbsp Sugar
  • 1tbsp dry Milk
  • 3-4 drops of  Cardamom Essence


Preparation:


  • In a pan add 2lr milk, wait till the milk boils.
  • We took 2-litre milk and keep it boiling until 1 litre remains on low flame.
  • When one boil comes we have to keep the cream(Balai) to the sides of the pan and stir, again creams on and we will stick the cream to the sides of pans until one cup left.
  • when 1-litre milk is left add 5tbsp of sugar and 1tbsp of dried milk 3-4 drops of cardamom essence.
  • Cook further for 15 minutes.
  • When 3/4 cup of milk is left, remove all the cream(Balai) from the sides and mix it in milk.
  • Shift the Rabri in a serving bowl and sprinkle almonds and pistachio.
  • Delicious Rabri is ready.
